PQ: What’s your food/wine philosophy?

CM: Eat well, eat healthy & like mom said: ‘Don’t forget to eat your vegetables.’

PQ: One food you can’t live without?

CM: Cereal / Grey Goose vodka.

PQ: One ingredient you can’t live without?

CM: Hot sauce.

PQ: One food you avoided as a child and now you love?

CM: I’m still a child…

PQ: Weirdest thing you’ve ever eaten?

CM: Tequila worm.

PQ: Most memorable meal you’ve ever eaten?

CM: On the top floor of the Masi Castle in Italy overlooking the vinyard. My best friend and I shared a meal prepared by a private chef.

PQ: Exact moment you decided to become a restauranteur?

CM: Eight years ago when we took over a bankrupt restaurant and turned it into the Mongolie Grill that it is now.

PQ: What’s your solution for a last-minute meal?

CM: La Tortilleria.

PQ: Best trend in food/restaurants?

CM: Modern design & decor that looks like they put some thought and heart into it.

PQ: Worst trend in food?

CM: Deep fried anything.

PQ: Greatest professional moment?

CM: Working with my partner Andrea Volker in creating and maintaining one of the busiest restaurants in Whistler.

PQ: Where would you go to eat, if you could go anywhere in the world?

CM: The Island of Capri in Italy… probably pizza & local wine.

PQ: Where would you go for your last meal in Whistler?

CM: Start with lunch at the Trattoria, then for dinner Radicchio Boconcini at Quattro, entrée at Tandoori, back to Quattro for dessert then off to see Kike at Kypriaki’s for a drink.

PQ: What brought you to Whistler?

CM: Snowboarding, but now it’s hockey.

PQ: Who has been the most influential person on your career?

CM: My mother, for her work ethics balanced with her love for life.
