This article seems to pertain to food-service businesses needing cooks/"chefs". If anyone is wondering why people would rather serve or bartend for relatively untaxed tips as opposed to working in a kitchen for a barely-liveable wage and minuscule tips, then I am confused how the hell they are business owners in the first place. Resort; tourism; seasonal : think about it. Some restaurants in town know that the foundation of their business is the chef and his/her kitchen staff, but the majority of places are not able to accept that. Sink or swim , you get what you pay for and good employees keep businesses and the municipality afloat.
