Q: What’s your food and wine philosophy?

RH: Food, Wine, Friends and family what more is there? On wine: If you like it drink it, if not get another bottle.

Q: One food you can’t live without?

RH: Steak.

Q: One ingredient you can’t live without?

RH: Garlic

Q: What food/drink should more people be more open to trying?

RH: Tequilas, not just as shooters but some of the better ones for sipping. Unfortunately the best are not available in B.C.

Q: Weirdest thing you’ve ever eaten?

RH: At the time, Rattlesnake, although now I don’t think it was that weird.

Q: Most memorable meal you’ve ever eaten?

RH: There are many. The most recent was with my friend Harry McWatters, of Sumac Ridge Winery, at La Toque in Napa Valley.

Q: Exact Moment you decided to become a chef?

RH: When I arrived in California with no money and hungry.

Q: What’s your solution for a last minute meal?

RH: Open the fridge see what is available and start cooking.

Q: Best Trend in food/restaurants?

RH: Fresh ingredients.

Q: Worst trend in food restaurants?

RH: Pretty food that is cold when it arrives because of the time it takes to make the picture.

Q: Where would you go to eat if you could go anywhere in the world?

RH: Other than Italy I have not been to much of Europe so I would like to try the cuisine in Spain.

Q: What brought you to Whistler?

RH: Mountains, fresh air, business opportunity.

Q: Personal Hero?

RH: My mom! Single mom with three boys, we were not easy on her.
