PQ: What’s your food/beer philosophy?

CM: If you pour it, they will come.

PQ: One food/beer you can’t live without?

CM: Sushi/perfect pint of Guinness.

PQ: What beer should people be more open to trying?

CM: Ales.

PQ: One food you avoided as a child and now love?

CM: Salmon.

PQ: Weirdest thing you’ve ever eaten?

CM: Grasshoppers.

PQ: Most memorable beer you’ve ever drunk?

CM: Pint of Guinness at St. James Gate. This is where Guinness is brewed, so it is the freshest pint of Guinness you’ll ever drink.

PQ: Exact moment you decided to become involved in the F&B industry?

CM: When the Canucks went to the Stanley Cup final. I thought, "I need to work in this kind of atmosphere."

PQ: What’s your solution for a last minute meal?

CM: The telephone.

PQ: Greatest professional moment?

CM: Coming to Whistler to manage the only Irish pub in Whistler.

PQ: Where would you go to drink beer, if you could go anywhere in the world?

CM: Ireland.

PQ: Where would you go for your last beer in Whistler?

CM: The end of the bar.

PQ: What brought you to Whistler?

CM: The powder; the snowboarding.

PQ: Who has been the most influential person on your career?

CM: My dad. He designed the Dubh Linn Gate, among many others.
