PQ: What’s your food/wine philosophy?

AS: A great glass of wine deserves a wonderful plate of food. A wonderful glass of wine deserves a great plate of food. But in cases where they are phenomenal they can stand on their own.

PQ: One food you can’t live without?

AS: French fries.

PQ: One ingredient you can’t live without?

AS: Butter.

PQ: What food/drink should people be more open to trying?

AS: A vast selection of wine of any sort, even if you think you don’t like it.

PQ: One food you avoided as a child and now love?

AS: Fish.

PQ: Weirdest thing you’ve ever eaten?

AS: Chicken feet.

PQ: Most memorable meal you’ve ever eaten?

AS: Holiday dinners with my family.

PQ: Exact moment you decided to become involved in the food industry?

AS: When I was 18 I was thrown into a busy 250-seat bar and grill and was told to "start bussing."

PQ: What’s your solution for a last minute meal?

AS: Sushi.

PQ: Best trend in food/restaurants?

AS: New restaurants opening continuously with different cuisine.

PQ: Worst trend in food/restaurants?

AS: Greasy spoon restaurants.

PQ: Greatest professional moment?

AS: I always wanted to be a G.M. My goal was to be one before I turned 40. I succeeded at 27.

PQ: Where would you go to eat if you could go anywhere in the world?

AS: Anywhere in France.

PQ: Where would you go for your last meal in Whistler?

AS: Rimrock.

PQ: What brought you to Whistler?

AS: Snowboarding.
